Green Goddess Chilled Blender Bowl
No-cook, all-blender, about 10 minutes. Serves 2.
Blend until smooth
- 1 can white beans (cannellini), rinsed
- 1 large cucumber, roughly chopped
- 1 ripe avocado
- 1 cup baby spinach
- A big handful of fresh basil and dill
- Juice of 1 lemon
- 1 small garlic clove
- 1/2 cup cold water (more to thin)
- Salt to taste
Stir in after blending
- 1 cup shelled edamame, thawed
- 1/2 cup diced cucumber
- 2 tbsp hemp seeds
- Drizzle of olive oil
Blend the first group until silky, chill for 20 minutes if you have time, then stir in the crunchy bits. Spoon it or sip it, topped with a little more hemp and olive oil.
