Ingredients:

1 cup cooked quinoa

1 cup steamed broccoli + asparagus

A handful of spinach

½ cup cubed beets

½ avocado

2 tbsp chopped parsley

1 tbsp olive oil + lemon juice dressing

¼ tsp turmeric + pinch black pepper
Directions:

Cook quinoa as usual; steam broccoli & asparagus until bright green.

Assemble in a bowl: quinoa → greens/veg → sliced avocado on top.
