Ingredients:

  • 1 cup cooked quinoa

  • 1 cup steamed broccoli + asparagus

  • A handful of spinach

  • ½ cup cubed beets

  • ½ avocado

  • 2 tbsp chopped parsley

  • 1 tbsp olive oil + lemon juice dressing

  • ¼ tsp turmeric + pinch black pepper

Directions:

  1. Cook quinoa as usual; steam broccoli & asparagus until bright green.

  2. Assemble in a bowl: quinoa → greens/veg → sliced avocado on top.

  3. Drizzle olive‑lemon dressing, sprinkle turmeric + pepper + parsley.

  4. Add beets.

  5. Toss lightly and enjoy.
