Ingredients:

  • 1 cup chopped kale, lightly massaged (you can substitute with mixed greens if you prefer)
  • 1/2 red onion, thinly sliced
  • 1 apple, diced (leave the peel on)
  • 1/2 cup blueberries or mixed berries
  • 1/2 cup broccoli florets, lightly steamed or raw
  • 1 cup chickpeas
  • 2 tbsp capers, rinsed
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Directions:

  1. Place the chopped kale or greens in a large bowl. Massage the kale with a small amount of olive oil for 1-2 minutes to soften.
  2. Add the sliced red onion, diced apple, blueberries, broccoli florets, chickpeas, and capers to the bowl.
  3. Drizzle with extra-virgin olive oil and lemon juice.
  4. Season with salt and pepper to taste.
  5. Toss everything together until well combined. Serve immediately.
