Berry-Kale Crunch Salad with Apples

This Kale, Apple, and Berry Salad is a nutrient-rich option for anyone seeking to increase their intake of quercetin and other antioxidants. Ingredients:
- 1 cup chopped kale, lightly massaged (you can substitute with mixed greens if you prefer)
- 1/2 red onion, thinly sliced
- 1 apple, diced (leave the peel on)
- 1/2 cup blueberries or mixed berries
- 1/2 cup broccoli florets, lightly steamed or raw
- 1 cup chickpeas
- 2 tbsp capers, rinsed
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Directions:
- Place the chopped kale or greens in a large bowl. Massage the kale with a small amount of olive oil for 1-2 minutes to soften.
- Add the sliced red onion, diced apple, blueberries, broccoli florets, chickpeas, and capers to the bowl.
- Drizzle with extra-virgin olive oil and lemon juice.
- Season with salt and pepper to taste.
- Toss everything together until well combined. Serve immediately.
