Berry Avocado Salad

This salad is cooling and a nutritional powerhouse. Arugula is rich in antioxidants and minerals, strawberries are a low sugar carbohydrate, and avocado is a great source of fiber, healthy fats, and vitamins.
Ingredients:
5 cups arugula
1 cup strawberries
1 avocado, diced
⅓ cup vegan or regular feta
⅓ cup walnuts
⅓ cup olive oil
Dressing:
2 tbsp freshly squeezed lime juice
1 tsp maple syrup (or other liquid sweetener)
2 tbsp finely chopped fresh mint
¾ tsp Celtic salt
Pepper
1 scoop Fiberus Prebiotic Powder
Directions:
Wash and dry all the produce.
Slice the strawberries and dive the avocado.
Mix the dressing ingredients well in a large bowl. Add the arugula, avocado, and berries and toss well with the dressing.
Sprinkle the feta and walnuts over the salad and serve.
