Coconut Blackberry and Blueberry Chia Pudding

Enjoy this pudding for breakfast, as a snack or as dessert. Each bowl provides omega-3 fatty acids from the chia seeds, fiber from the berries, and natural sweetness from the fruit. We added a scoop of our Fiberus for an additional 6.5 grams of fiber to help bring you closer to the recommended dosage of 25 to 35 grams of fiber a day. 

This recipe provides 12.5 grams of fiber. That's a little less than halfway to your goal for the day!

Ingredients

½ cup blackberries and blueberries (~3.5 grams of fiber)
¼ cup chia seeds (2.5 grams of fiber)
1 cup coconut milk (or a milk of your choice)
1 tbsp unsweetened shredded coconut (0.5 grams of fiber)
1 scoop Fiberus (6.5 grams of fiber)
1 tbsp maple syrup (optional)

Directions

  1. Place chia seeds, coconut milk, and shredded coconut in a small or medium mason jar.
  2. Cover with a tight lid and shake to combine well.
  3. Store in the fridge for 10-15 minutes, or overnight.
  4. Add berries & enjoy.
