Savory Spinach Goat Cheese Omelet

Skip the breakfast cereal and bread and make this savory omelet instead. Highly processed cereals and bread tend to have added sugar which can spike your blood sugar and leave you feeling sluggish and shaky by lunchtime. Filling up with a breakfast rich in protein from eggs and fat from cheese, will keep you satiated and help you focus.

Ingredients

2-3 pasture-raised eggs

1-2 tbsps crumbled goat cheese

1 cup of fresh or frozen spinach

1 tbsp hemp seeds

1 green onion chopped

salt and pepper to taste

drizzle of olive oil

Optional: Stir in a few scoop of Morphus Fiberus to the ingredients before you cook it to increase the fiber in your diet.

Directions

1. Heat a pan with a drizzle of olive oil on medium heat until bubbling slightly.

2. Add spinach and green onion to the pan and sauté. Remove from pan.

3. Mix eggs, salt, pepper, and hemp seeds and add to the pan. Cook until firm but still a little watery.

4. Sprinkle the omelet with goat cheese and the spinach. Serve and enjoy.
