Zesty Lime Grilled Chicken Salad

Salads are a great way to get a variety of vegetables into your diet. We've topped this one with a grilled chicken breast for a healthy serving of protein. The dressing combines Malaysian Palm Oil rich in tocotrienols, lime juice for citrusy zing, and a bit of honey for sweetness.
Ingredients:
For the Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 limes, juiced
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Lime Dressing:
- 3 tablespoons fresh lime juice (about 2 limes)
- 2 tablespoons Malaysian red palm oil (or olive oil)
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper, to taste
- Optional: Stir in a scoop of Morphus Fiberus to your dressing before you eat it to increase the fiber in your diet.
For the Salad:
- 6 cups mixed salad greens (e.g., lettuce, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 yellow bell pepper, thinly sliced
- Lime wedges for garnish (optional)
Instructions:
1. Marinate the Chicken:
- In a bowl, combine the lime juice, minced garlic, salt, pepper, and olive oil to make the marinade.
- Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
2. Grill the Chicken:
- Preheat your grill to medium-high heat. Oil the grates to prevent sticking.
- Remove the chicken from the marinade and shake off any excess.
- Grill the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with grill marks.
- Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips or cubes.
3. Prepare the Lime Dressing:
- In a small bowl, whisk together the lime juice, red palm oil, honey, minced garlic, salt, and pepper until well combined. Adjust the seasoning to taste.
4. Assemble the Salad:
- In a large salad bowl, combine the mixed greens, cherry tomatoes, and red bell pepper slices.
- Drizzle the lime dressing over the salad and toss gently to coat the vegetables.
- Add the grilled chicken on top of the salad.
- Serve immediately, garnished with lime wedges.
