Zesty Lime Grilled Chicken Salad

Salads are a great way to get a variety of vegetables into your diet. We've topped this one with a grilled chicken breast for a healthy serving of protein. The dressing combines Malaysian Palm Oil rich in tocotrienols, lime juice for citrusy zing, and a bit of honey for sweetness.

Ingredients:

For the Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Lime Dressing:

  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons Malaysian red palm oil (or olive oil)
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Optional: Stir in a scoop of Morphus Fiberus to your dressing before you eat it to increase the fiber in your diet.

  • 6 cups mixed salad greens (e.g., lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 yellow bell pepper, thinly sliced
  • Lime wedges for garnish (optional)

Instructions:

1. Marinate the Chicken:

  1. In a bowl, combine the lime juice, minced garlic, salt, pepper, and olive oil to make the marinade.
  2. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

2. Grill the Chicken:

  1. Preheat your grill to medium-high heat. Oil the grates to prevent sticking.
  2. Remove the chicken from the marinade and shake off any excess.
  3. Grill the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with grill marks.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips or cubes.

3. Prepare the Lime Dressing:

  1. In a small bowl, whisk together the lime juice, red palm oil, honey, minced garlic, salt, and pepper until well combined. Adjust the seasoning to taste.

4. Assemble the Salad:

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, and red bell pepper slices.
  2. Drizzle the lime dressing over the salad and toss gently to coat the vegetables.
  3. Add the grilled chicken on top of the salad.
  4. Serve immediately, garnished with lime wedges.
