Ingredients:

  • 2 cups mixed salad greens
  • 1/2 cup beets
  • 1/2 cup pomegranate
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Grilled salmon or chicken breast (optional)

Instructions:

  1. In a large bowl, combine the mixed greens, beets, pomegranate, and chopped walnuts.
